Breakfast this morning was Ella Woodward’s coconut porridge. I’ve never been much of a porridge fan but I’m loving this recipe – it’s comfort food and it keeps me from needing a mid-morning snack fix. You can find the (super simple) recipe here on the Deliciously Ella website.
The ingredients you’ll need for this coconut porridge are:
- Coconut milk
- Almond butter
- Coconut oil
- Blueberries or your preferred toppings
I don’t use the almond butter but if you’re going to, then there’s a recipe for making your own in the Deliciously Ella book or you can buy good quality nut butters from whole food shops or Holland and Barrett (or most of the high-street retailers stock a version these days). The recipe only needs a few spoonfuls of coconut milk so I put the rest into an air-tight container and pop it in the fridge to use later for a curry. Or you can freeze in ice cube moulds for when it’s next needed – it may separate but it will all mix back together when heated.
My topping of choice is pumpkin seeds, lightly toasted almond pieces and a good handful of berries. (It’s in times like this I rely on my friend the freezer who is always able to supply me with berries when my fridge or fruit bowl fail me).
Quick, easy and actually pretty delicious as the book name suggests. I’m told (by Ella – in the book, not person to person!) that it’s good for me too.
