Pilaf-style cauliflower rice

cauliflower rice recipe

This cauliflower rice recipe is another favourite from Hemsley and Hemsley – The Art of Eating Well.  I usually serve it up alongside a curry but you could easily throw in some other veg and make it more of a main dish.

The first thing to clear up is that there’s actually no rice involved. It’s a cauliflower impersonating rice recipe. Good if you’re looking to get some extra veg in your life or cut back on the carbs. Most eaters of this will not be fooled that it’s rice…but it tastes great and you’ll get a hefty hit of Vitamin C from the cauliflower too.

What you’ll need:

  • cauliflower
  • pistachios or flaked almonds
  • coconut oil
  • onion
  • ground turmeric
  • dried bay leaves
  • cardamom pods crushed
  • raisins
  • water (or bone broth if you’re a meat eater)
  • lemon juice
  • Salt and pepper to taste

For the ingredient amounts and recipe click here (I’ll get a copyright slapped wrist if I include it.) If you want some visual guidance there’s a video on how to make cauliflower rice on the Hemsley and Hemsley website. So that’s it. Minimal ingredients. No more than 20 minutes to make. And I think it’s delicious.

I use my copy of Hemsley and Hemsley – The Art of Eating Well all the time. So I’d recommend it if you’re looking for flavoursome and healthy food inspiration.
