This cauliflower rice recipe is another favourite from Hemsley and Hemsley – The Art of Eating Well. I usually serve it up alongside a curry but you could easily throw in some other veg and make it more of a main dish.
The first thing to clear up is that there’s actually no rice involved. It’s a cauliflower impersonating rice recipe. Good if you’re looking to get some extra veg in your life or cut back on the carbs. Most eaters of this will not be fooled that it’s rice…but it tastes great and you’ll get a hefty hit of Vitamin C from the cauliflower too.
What you’ll need:
- pistachios or flaked almonds
- coconut oil
- ground turmeric
- dried bay leaves
- cardamom pods crushed
- water (or bone broth if you’re a meat eater)
- lemon juice
- Salt and pepper to taste

And I think it’s delicious.
