Red lentil, sweet potato and coconut soup

Today was a day that called for a comforting bowl of soup. I could’ve made use of my soup stash from the freezer but I had some sweet potatoes that needed using up and Jamie Oliver’s red lentil, sweet potato and coconut soup took my fancy.

To make this soup you’ll need…

  • Sweet potatoes
  • Red onions
  • Cumin seeds
  • Ground coriander
  • Olive oil
  • Garlic
  • Fresh red chilli
  • Fresh coriander
  • Red lentils
  • Organic vegetable stock
  • Coconut milk
  • A lemon

If you’ve read about any of my other attempts at cooking you won’t be surprised to know that I made a few adjustments to the recipe based on what ingredients I had in the house. First up the recipe serves 6 but I didn’t have enough sweet potatoes or enough mouths to feed so I halved the quantities. Even then I was a little lacking in the sweet potato area so I threw in some carrots instead. And no fresh chilli or coriander in sight so I went for the dried variety. I went for extra chilli flakes but if you’re not a fan of a fiery kick then maybe add a little at a time.

In my humble opinion it tasted jolly good. With a real richness and depth of flavour it was perfect for warming you up on a cold day. I had leftovers, as always, so the trusty freezer bags came out again for some soup flat packing!
