Women Aloud tries traybaked chicken and veg…
The neighbours were coming for dinner at Women Aloud HQ. Panic. I am no Nigella (in any aspect of life!) so cooking for six was stressing me out a little. I had to be honest with myself, I’d likely leave everything to the last minute and have a couple of Proseccos so the meal of choice needed to be easy, with minimal, urm, actual cooking! So when I saw Jamie Oliver’s ‘hit n run’ traybaked chicken recipe, I knew I’d found my dish.
It takes a good hour to cook but there’s little prep time needed and if you fill everyone up on some shop bought antipasti (and a load of wine) then no one notices if you eat at midnight.
Ingredients to make this traybaked chicken dish [serves 4]
- 4 large tomatoes
- 2 red onions
- 1 red pepper
- 1 yellow pepper
- 6 skinless, boneless chicken thighs
- 4 cloves of garlic
- 1/2 bunch of thyme
- 1 tsp smoked paprika
- 2 tbsp. olive oil
- 2 tbsp. balsamic vinegar
I also threw in some sweet potatoes and courgette. And I added extra smoked paprika as I like more of a punchy flavour. I took my baking dishes straight to the table for people to help themselves. And to go with it we had salad, couscous and crusty bread. The leftover veg I blitzed up the next day and reheated with some tinned tomatoes to make a veggie pasta sauce which the toddler loved.
Next time I’ll try something more challenging (maybe?!)
